Mizeria Polish Cucumber Salad

Mizeria Polish Cucumber salad is a cool and refreshing side dish to try along with smoked brisket or even a Sous Vide Brisket, on a hot summer day.

Ingredients

(Prep Time: 10 Min - Ready: 45 Min)

  • 1 Pound Small Cucumbers (Peeled & Sliced)
  • 1 Bunch Chopped Dill
  • 2 ½ Tbsp Sour Cream
  • 1 Tsp Lemon Juice
  • 1 Pinch White Sugar
  • Salt & Pepper to Taste

Directions

  1. Sprinkle the salt over the sliced cucumber in a large bowl. After you mix them well, let them sit until the cucumbers become soft, usually 5-6 minutes.
  2. After resting, squeeze the liquids from the cucumbers and add the dill.
  3. Mix the sour cream, lemon juice and sugar in a bowl and add the mixture to cucumbers. Season the mixture with black pepper and let it sit before serving, preferably at least 30 minutes.

Kalamata Olive Tapenade

Tapenade is a Provencal name for a pureed or finely chopped olives, olive oil and capers combined together.

Ingredients

  • 3 Cloves Garlic
  • 2 Tbsp Capers
  • 1 Cup Kalamata Olives
  • 3 Tbsp Fresh Parsley (Chopped)
  • 2 Tbsp Lemon Juice
  • 2 Tbsp Olive Oil
  • Salt and Pepper to taste

Directions

  1. Place the garlic into a food blender and finely chop them. Add the olives, capers, parsley, and other ingredients to the blender and blend them all together until everything is made into a pureed mixture.
  2. When served, season lightly with salt and pepper to taste.

Jalapeno Ranch Coleslaw

A very easy to make and delicious recipe, which can also be used to make tacos with pulled pork or smoked beef.

Ingredients

  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • 2 tbsp lime juice
  • 1 jalapeno
  • 1 garlic
  • 8 cups shredded cabbage
  • ½ cup sliced onion
  • 1/3 cup chopped cilantro
  • ¼ cup sliced chives
  • ¼ cup parsley
  • Salt and pepper

Directions

  1. Whisk together the mayonnaise, sour cream, jalapeno, garlic and lime juice in a large bowl. Then, add the cabbage, onions, cilantro, parsley, and chives. Toss them all together to combine.
  2. Season with salt and pepper and let it rest for about 5 minutes. 

Sweet and Sour Cabbage Soup

You can use reheated pulled pork or beef for the stock or to prepare the base of this cabbage soup.

Ingredients

(Prep Time: 1 hour 30 Min - Cook: 5 hours 30 Min)

For the Stock

  • 4 Pounds Beef Shank (bone-in)
  • 12 Cups Water
  • 3 Peeled Carrots
  • 3 Peeled Onions
  • 4 Stalks Celery with Leaves
  • 1 Bay leaf
  • 16 Peppercorns

For the Soup

  • 2 tbsp vegetable oil
  • 1 peeled onion
  • 2 cloves garlic
  • 1 tbsp sweet paprika
  • 1 head savoy cabbage
  • 1 can diced tomatoes with juice
  • 1 lemon
  • ¼ white sugar
  • ¼ cup chopped fresh dill
  • Salt and pepper

Directions

  1. In a large pot, combine the beef shank and the water and bring them to boil. Use a strainer to skim off the foam on the surface. Take the carrots, onions, celery stalks, bay leaf, and peppercorns and add to the pot. Simmer them for 4 hours.
  2. Strain the stock from the pot, remove the vegetable but save the meat. Leave it on the side to cool down to the room temperature, and then refrigerate overnight. When it is cool, remove the meat from the bones and dice it into narrow small pieces. Refrigerate the meat overnight.
  3. Tomorrow, on a stock pot, stir in the garlic and the onion and stir them until the onion is softened and turned translucent. Add the paprika and the cabbage and stir occasionally until slightly wilted about 8 minutes.
  4. Remove the stock from the refrigerator and pour it into a pot. Add the tomatoes and bring the soup to boil, then reduce the heat to simmer. Cook the soup for around 1 hour until cabbage is soft.
  5. Finally, add the lemon juiced, the sugar, dill, salt, and pepper and add more water if you want a thinner soup. Cook it for around 5 minutes and don’t forget to adjust the salt and pepper ratio based on your preferences.

Grilled Potato Salad with Lemon and Oregano

Ingredients

(Prep Time: 20 Min - Cook: 15 Min)

  • 2 lb medium red potatoes
  • 3 tbsp of olive oil
  • 3 tbsp virgin olive oil
  • ½ small red pepper
  • 1 lemon, juiced
  • 2 tbsp chopped fresh oregano
  • 2 tbsp chopped fresh chives
  • 3 ounces feta cheese
  • Salt and pepper

Directions

  1. Cut the potatoes into ½ inch slices and boil them in salt water for around 5 minutes. Let them cool and brush them with olive oil and season with salt and pepper when are completely cooled.
  2. Cook the potatoes on a medium heat until brown.
  3. Whisk together the olive oil, red pepper, lemon juice, oregano, and chives. Pour the mixture over the grilled potatoes.
  4. Serve them and crumble feta cheese over the top.

Easy Potato Kugel

(Prep Time: 30 Min - Cook: 1 hour 30 Min)

  • 10 Peeled Potatoes
  • 2 Peeled Onions
  • 5 Eggs
  • 1 tbsp Vegetable oil
  • 1/3 cup vegetable oil
  • 2 tsp of salt & 1 tsp of pepper

Directions

  1. Start by preheating the oven to 350°F and by greasing a pan with 1 tbsp of vegetable oil.
  2. Combine the potatoes and onions in a bowl. Mix the eggs, 1/3 cup of vegetable oil, salt, and pepper together and pour the mixture into the pan.
  3. Bake them until the top is golden brown and crisp, usually 1 ½ to 2 hours.

Plantain Fritters

  • 2 lbs potatoes (preferably shredded)
  • 1 onion (shredded)
  • 2 eggs
  • ¼ cup flour
  • ¼ tsp baking powder

Directions

  1. Start by preheating the oven to 425°F
  2. Take a large bowl and mix all the ingredients together. Add salt and pepper to taste.
  3. Spray two baking sheets and add the latke mixture by the ¼ cup and flatten.
  4. Bake it for around 15 minutes, turn them on the other side and bake for another 10 minutes.
  5. Serve them with applesauce or sour cream, based on your preferences.

  • 2 Large peeled Plantains
  • 1 Cup flour (self-rising)
  • 1 small onion
  • ¼ tsp of salt

Directions

  1. Place the plantain in a food processor and process them until they become smooth. Add the flour, onions, salt and pepper, and process altogether until blended.
  2. In a skillet, heat the oil to 375° and drop tablespoons of batter into the hot oil. Cook them for 1 minute on each side and drain on paper towels when they are done.

For the Chicken

  • ½ pound ground chicken
  • 1 potato, mashed
  • 1 egg
  • 1 small onion
  • ½ tsp of salt

For the Broth

  • 2 cups of water
  • ½ tsp salt & 1 tbsp sugar
  • 1 carrot
  • 1 sliced onion

Directions

  1. Combine the ground chicken with all the other chicken-ingredient list and refrigerate for 10-15 minutes.
  2. Combine all the broth ingredients together in a pot and bring the mixture to boil.
  3. Shape the chicken mixture into balls and drop them into the boiling water.
  4. Cook them to medium heat for about one hour.

BBQ Roasted Potato Nuggets

Great recipe to be used along a Sous Vide Beef Ribs, Smoked Chicken Legs or Smoked Fresh Ham.

Ingredients

  • 6-8 large potatoes, cut into 2-inch chunks
  • ½ cup olive oil
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • 4 tbsp Spice dry rub
  • 1 whole garlic

Directions

  1. Boil the potatoes in salted water for 4 minutes.
  2. Heat a baking pan in a 375°F oven, large enough to hold all your potatoes.
  3. After potatoes are boiled, let them rest for 5 minutes. Then, toss them with olive oil, salt, pepper, dry rub, and garlic.
  4. Transfer the potatoes to the hot baking pan, together with the garlic.
  5. Roast the potatoes for 60-75 min, turning them every 20 minutes or so.
  6. The garlic should be removed faster as it is cooked faster.

Pumpkin Soup

This delicious, cream-like soup is served usually at holidays like Thanksgiving and goes well with smoked turkey or grilled chicken.

Ingredients

  • 6 Cups chicken stock
  • 4 cups pumpkin puree
  • 1 tsp chopped parsley
  • 1 cup chopped onion
  • ½ tsp chopped thyme
  • ½ cup heavy whipping cream
  • 1 clove garlic
  • 5 whole black peppercorns
  • 1 ½ tsp salt

Directions

  1. Mix the chicken stock, pumpkin, onion, thyme, garlic, peppercorns and salt into a pot and bring them to boil. Reduce the heat to simmer for 30 minutes.
  2. Puree the soup 1 cup at a time on a blender.
  3. Pour the puree into the pan again and boil again. Simmer for another 30 minutes. Stir in heavy cream and then pour into bowls by garnish with fresh parsley. 

Shrimp Pasta Salad

Ingredients

  • 2 ½ cups cooked pasta
  • 1 ½ cups cooked shrimp
  • ½ cup thinly sliced red pepper
  • ½ cup julienned snow pea
  • 2/3 cup of greek yogurt
  • One lemon, juiced
  • 2 cloves garlic
  • 4 tbsp olive oil
  • 1 ½ tsp honey
  • 2 tbsp chopped chives
  • Salt and pepper

Directions

  1. Cook the pasta al dente and rinse with cold water. Sit them aside.
  2. Whisk together all ingredients and let them sit for 20 minutes. If you like the dressing much thinner, you can add more lemon juice.
  3. Mix together the pasta and the dressing.

Basic Lasagna Recipe

A super easy and basic lasagna recipe with beef without needing to bring the noodles to boil.

Ingredients

  • 1 pound of lean ground beef
  • 1 chopped onion
  • 1 can of mushrooms
  • 1 jar of spaghetti sauce
  • 1 package of cottage cheese
  • 1 pint of part-skim ricotta cheese
  • ¼ cup grated parmesan cheese
  • 2 eggs
  • 1 package lasagna noodles
  • 8 ounces shredded mozzarella cheese

Directions

  1. Start by preheating the oven to 350°F
  2. Take a large skillet and cook the ground beef until brown. Add the onions, the mushrooms and saute until onions become transparent. Add the pasta sauce and mix them well.
  3. In a bowl, add the cottage cheese, parmesan, ricotta cheese, and eggs.
  4. Spread a thin layer of meat sauce into a pan and then add a layer of uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce again. Cover pan with aluminum foil when all the mixture is used.
  5. Bake the pan into the oven for 1 hour and let it stand for 10 minutes before serving.

Creamed Corn with Smoked Sausage

This dish is perfect to complement meats cooked over a gas grill and would be a great addition to add to a taco recipe or to enjoy with some great grilled summer sausages.

It is not very sweet and the flour is balanced beautifully with the other ingredients. 

Ingredients

(Prep Time: 10 Min - Cook: 35 Min)

  • 12 ears of fresh corn
  • 1 tbsp vegetable oil
  • 1 ½ cups of smoked sausage
  • 1 medium sweet onion
  • 1 clove garlic
  • 1 cup heavy cream
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ½ tsp red pepper
  • 2 tsp thyme

Directions

  1. Take the corn and place it into a large bowl and cut the kernels. Use a knife to scrape off the pulp from each cob. In the end, you should get 1 ½ cup of pulp. Place it into the bowl with the kernels.
  2. Heat a 12” skillet over medium-high heat
  3. Add the smoked sausages, onions and cook until lightly browned.
  4. Add the garlic and cook them all together for around 4-5 minutes.
  5. Add the corn and stir in ¾ cup cream and ½ teaspoon of salt.
  6. Cover the mixture and simmer for 15 minutes. Remove the cover and cook for another 15 minutes.
  7. Add the remaining cream, pepper, red pepper, thyme, and salt.
  8. Cook for a few minutes and it is ready to be served. 

Apple Cake with Cream Cheese Frosting

This easy apple cake is a perfect dessert for the fall season, after having a heavy prepared bbq steak dish.

Ingredients

(Prep Time: 20 Min - Cook: 45 Min)

For the Apple Cake

  • 2 cups flour (all purpose)
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • ½ tsp salt
  • ¼ tsp ground nutmeg
  • ¼ tsp ground allspice
  • 2 cups granulated sugar
  • ½ cup of vegetable oil
  • 2 eggs
  • 4 cups chopped peeled apples

For the Cream Frosting

  • 8 oz cream cheese
  • 4 tbsp butter
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

Directions

  1. Preheat the oven to 350°F and prepare a pan by flouring it.
  2. Take a medium bowl, and mix together the flour, baking soda, cinnamon, salt, and allspice.
  3. Take another bowl, whisk together the sugar, eggs, oil and vanilla extract. Stir this mixture into the flour mixture slowly. When the batter becomes thick, stir in the apples until cake batter moistens.
  4. Pour the batter into the pan and bake for 45 minutes. After that, remove from the oven and let it cool completely.
  5. Prepare the cream frosting by combining in a bowl of a stand mixer the cream cheese, butter, powdered sugar, and vanilla extract. Beat until smooth.
  6. Frost the cake with the cream cheese frosting and cut into small pieces to serve.

Pink Lady Pie

  • ¼ cup soft butter
  • ¼ cup of sugar
  • 1 ½ cups crushed vanilla wafers
  • ¾ cup of orange juice
  • 12 ounces of marshmallows
  • 1 ½ cups heavy cream
  • 1 package of frozen raspberries

Directions

  1. Combine the wafers, butter, and sugar together and then press them into a 9” pie plate. Bake it at 375°F for 5 minutes.
  2. Heat the orange juice in a double boiler and add the marshmallows until melted.
  3. Let the mixture chill in the refrigerator
  4. After it is partially set in the refrigerator, fold in the cream and raspberries
  5. Pour the prepared mixture into crust and top with extra cream if desired.

  • 1 egg white
  • 1 tsp ground cinnamon
  • 1 cup white sugar
  • 1 pound pecan halves
  • 1 tbsp water

Directions

  1. Prepare and preheat your oven at 250°F.
  2. Mix the sugar, cinnamon, and salt together.
  3. Take the egg whites and the water and mix together until frothy. Toss the pecans in the egg mixture and then add the sugar mixture until pecans are coated. Spread this whole mixture into a baking sheet.
  4. Bake the coated pecans in the oven, stirring every 15 minutes, until pecans are browned, for around 1 hour. 

Chocolate Berry Trifle

  • 1 four serving size chocolate pudding
  • 1 can sweeten condensed milk
  • 1 cup heavy cream
  • 2 containers cool whip
  • 8 ounces cream cheese
  • 2/3 package of Oreo cookies
  • 1 cup of water
  • 1-pint blueberries or blackberries
  • 1-pint strawberries

Directions

  1. For the chocolate layer, whisk together the pudding, water, and sweetened milk. Refrigerate the mixture.
  2. Whip the cream until soft using a food mixer. Fold the mixture into the chocolate pudding and refrigerate again.
  3. For the cream cheese layer, whip the cream cheese until is fluffy. Add the thawed cool whip and mix them again until fluffy.
  4. Layer all the ingredients into trifle dishes, by doing a layer of pudding, cookies, strawberries, cream cheese, and berries.

Sand Tarts

These amazing buttery cookies are a great and dessert recipe you should definitely try.

Ingredients

  • 1 cup butter
  • 2 cups flour (all purpose)
  • 1 cup chopped walnuts
  • ¼ cup confectioners sugar
  • ½ cup confectioners sugar
  • 1 tsp vanilla extract

Directions

  1. Combine the butter, the vanilla extract and ½ cup of confectioners sugar into a large bowl. Add the flour and mix them well until blended. Add the nuts and shape the dough into a disc and wrap with plastic wrap. Refrigerate until it is cooled completely.
  2. Preheat the oven to 325°F.
  3. Shape the dough into 1 inch balls and place them into a prepared sheet. Bake them about 20 minutes until are lightly colored.
  4. Sift ¼ cup confectioners sugar into the bowl and roll the cooked cookies gently to coat. After they are coated, place them into a plastic bag and seal well to make the cookies sweat and form an icing around. It usually takes 5 minutes to form the icing coating and then transfer to rack and cool.
